Pineapple and Strawberries with Mint Lime Sugar

Refreshing and light, this combination of fruit with fresh mint and lime zest is the perfect ending to a summer meal, picnic or bbq.  It’s also a healthy snack, or nice addition to a special brunch.
Flavoured sugar is easy to make, yet sophisticated to serve.  This mix brightens up fruit, adds a pop of flavour to ice tea, baking, or is impressive on the rim of a fancy beverage.
Mint Lime Sugar
mint leaves (about 10 large)
lime zest of 1 lime
sugar 3 tablespoons
good pinch of salt
Put all ingredients in small bowl of food processor and process.  You may need to shake it a little to loosen the sugar if it compacts.  (Dry on baking sheet if making in advance.)
Prepare fruit and mix in 1 tablespoon of Mint Lime Sugar or to taste.
