Chard and Sweet Potato Frittata with Swiss Cheese

Delicious cheese topped frittata made with eggs, Swiss chard and sweet potatoes.  It's a great way to get both dark green and orange vegetables in one meal
Chard and Sweet Potato Frittata

Frittatas are such terrific one dish meals and this one has a healthy serving of both green and orange vegetables.  These two vegetable colours are so important we aim to have a serving every day! The wonderful nutty flavour of the swiss cheese pairs so well with the chard and the sweet potato, and the breadcrumbs  will magically form a nice crust. Perfect for breakfast, brunch, lunch or dinner!  Nutritious and Delicious!

 

Chard and Sweet Potato Frittata with Swiss Cheese
4 cups finely chopped chard
11/2 cup grated sweet potato
1 small onion, finely diced
1 tablespoon olive oil
5 eggs
1/2 cup cottage cheese
1/2 cup milk
3/4 cup Swiss Cheese
paprika
pepper
salt
1/3 cup bread crumbs (sub gluten free bread for a gluten free option)

Grease pie plate or quiche plate with butter and spread Panko on the bottom and sides  (It will form the crust).  Heat oil in a medium saucepan and cook onion until soft.  Add grated carrot and chard and cook until soft.  Remove from heat.  In a medium size bowl, add eggs, cheese, milk, 1/2 cup swiss cheese and spices.  Arrange vegetables in pie plate and pour egg mixture on top.  Sprinkle with remaining cheese.  Bake for 25-30 minutes until set and cheese is melted and slightly browned.  Let cool slightly before cutting.
